    The apple is by students of Dr Harald Edgerton (inventer of the strobe light), at MIT.
    It was shot with a fairly slow shutter speed, somthing like 1/200, but the strobe (triggered by the bullet leaving the muzzle) light lasted somthing like 1/5000 sec.

    I worked with his son, briefly, back in the 80's.

    While working at GM back in the 80's I modified a diesel cylinder head to give optical access to the combustion chamber. We took some awsome color pictures of the ignition and flame propagation at 1/4000 I believe. Shutters at that speed are not your typical mechanical shutter. They are a rotating prism. I miss those fun things!

    In contolled lighting conditions (as in the apple), the shutter speed is not what catches the moment.

    The room is relatively dark, and the strobe flash at around 1/5000 to 1/8000 is what catches the action.

    In outdoor scenes, its done by cameras that are like movie picture cameras where as the camera is taking pics every 10th or 100s or 1000ths of a second and they pic out the best frame. This process can use up hundreds or thousands of frames of pics.

    That F16 Ejected cause it was in a flat spin. You can see the turbulance going over the wings and then up.
